Yep that is a cookie and brownie in one! These are seriously so good and the best part is- they aren’t too sweet at all. Forget that sickly sweet aftermath of indulgent treats and replace it with a nourishing , wholesome feeling. All the yumminess without the nasties . These guilt free clean treats are seriously to die for ! Make them this weekend as part of your meal prep for that 3pm kick during the week. I have given cacao nibs and chocolate as options- I liked using a mix of both. I loveeee cacao nibs but using a dark choc gives you that indulgent melted goodness so I recommend a combo!

Ingredients

Cookie Layer

1 cup Almond meal

½ cup buckwheat flour

1 egg

2 tbsp maple syrup

1 tbsp tahini

1/2 cup cacao nibs or dark choc chunks

pinch salt

1 tsp vanilla

1 tsp baking powder

1 tsp cinnamon

Brownie Layer

2 eggs

1/3 cup cacao

½ cup almond meal

½ cup buckwheat flour

1 tsp baking powder

1 tsp vanilla

pinch salt

1 scoop choc protein (optional)

1-2 tbsp sweetener (nuvia or maple: taste and see how sweet you like it )

dash almond milk

2 tbsp coconut oil

1/3 cup choc chips or cacao nibs



Method 

  1. Preheat the oven to 170 degrees

  2. Combine the cookie ingredients and brownie ingredients in two separate bowls

  3. Line a baking tin and lay down your cookie mixture spreading evenly with a spoon or spatula

  4. Pour over your brownie mixture and spread evenly the same way

  5. Bake for 20 minutes

  6. Enjoy warm while that chocolate melts in your mouth yumm! Tag me in your creations @scoopitup_
