apple, walnut & cinnamon muffins

These have been my favourite light brekkie or on the go snack lately. They are super fluffy AND gluten free ! ( hard to find) I like to freeze mine then warm them up when I want a snack .

 

apple, walnut & cinnamon muffins

Ingredients

1 tbsp olive oil

1 tbsp honey

1/2 tsp baking soda

1 tbsp all spice

1 apple chopped in small pieces

1 cup almond meal

1/2 cup buckwheat flour

1/2 cup walnuts chopped

2 eggs

( almond milk if needed to mix)

Method

  1. Preheat oven to 180 degrees celsius

  2. Mix all together in a bowl

  3. Place into lined muffins tins

  4. Bake for 25 minutes .. enjoy!
