Matcha & Coconut Granola
Ingredients
1 sachet Kakadu Plum, Pineapple and Coconut Oats ( OR 2 scoops vanilla/caramel protein powder )
½ cup buckwheat kernels
½ cup chopped almonds and hazelnuts
½ cup coconut flakes
1 tbsp flaxseeds
1 tsp matcha powder
pinch salt
1 tsp vanilla
1 tsp cinnamon
2 tbsp coconut oil
2 tbsp maple syrup
1 tbsp cashew butter
1 tbsp almond milk
Method
Preheat the oven to 180 degrees
In a bowl place all dry ingredients
In another small bowl combine all wet ingredients and microwave for 30 seconds
Pour into dry mixture and combine. ( often using your hands will make sure everything is better coated than using a spoon)
Spread over a lined baking tin and make sure it is well spread out ( this well help make yummy chunks)
Cook for 20-25 minutes
Remove from the oven and allow to completely cool before touching. This will make sure it clusters together. Once cooled, store in an airtight container.
