Matcha & Coconut Granola

It is all too easy to reach for those yummy but dangerously sugary supermarket clusters.. so what better than making your own! The matcha provides a super antioxidant boost , along with the added plant protein from eimele oat blend, this is the perfect high protein snack or breakfast option with some fresh fruit and nut milk or on top of your favourite smoothie. If you don’t have the eimele protein, feel free to use any other protein powder you have in your house, it will help stick it together. 

 

Matcha & Coconut Granola

Ingredients

1 sachet Kakadu Plum, Pineapple and Coconut Oats ( OR 2 scoops vanilla/caramel protein powder ) 

½ cup buckwheat kernels

½ cup chopped almonds and hazelnuts 

½ cup coconut flakes

1 tbsp flaxseeds

1 tsp matcha powder

pinch salt

1 tsp vanilla

1 tsp cinnamon 

2 tbsp coconut oil 

2 tbsp maple syrup 

1 tbsp cashew butter 

1 tbsp almond milk 

Method

  1. Preheat the oven to 180 degrees

  2. In a bowl place all dry ingredients 

  3. In another small bowl combine all wet ingredients and microwave for 30 seconds

  4. Pour into dry mixture and combine. ( often using your hands will make sure everything is better coated than using a spoon) 

  5. Spread over a lined baking tin and make sure it is well spread out ( this well help make yummy chunks) 

  6. Cook for 20-25 minutes

  7. Remove from the oven and allow to completely cool before touching. This will make sure it clusters together. Once cooled, store in an airtight container.
